Years ago, when the internet was young and innocent, we used to recommend a "catch all" email address for domains
This was good as it meant that if someone mistyped a name - joebloggs@blahblah.com instead of josephbloggs@blahblah.com, then their mail would reach a catchall address at your domain where the error could be noticed and mail forwarded to the correct mail address.
Since the rise of Spam, this courtesy feature means that any address at your domain wil be delivered. i.e joe@blahblah.com + all the other derivatives of this that the Spammers have decided to use .
Not good
We therefore advise that as a front line action, domain owners:
DO NOT USE A CATCHALL
Unless you are prepared to receive lots of unwanted mail
Also remember that all the unwanted mail that you receive is not always Spam.
None of the above, however annoying, should not be reported as SPAM.

And what can you do about SPAM:
Become a SPAM killer - Check the information at:
http://spamcop.net/fom-serve/cache/125.html
When you sign up - you will get an email and password.
Once you have
this you can help clean up spam simply by submitting Spams that have not
already been identified as such. No ***SPAM*** in the header.
To do this, you have to be able to copy the ful mail, including the received headers - see our howto guide for your email software "how to read" headers.
The when you submit an offending email, watch for the Fresh Meat message - which tells you that you are the first to report this.......and get some satisfaction that you have helped to successfully trip up a Spammer
